It is never advisable to have the septic tank around the center of the home. Given that logically how do you drain off excess "gas - methane or other gases". Your second question, is a more important concern. While the first can easily be "rectified" i.e. make sure that the gas or dirty air don't flow and contaminate cooked food in anyway. Since it is rectangular and not square, most of the time, the edges runs parallel to the ceiling. If it is a squarish design, then avoid the "diamond shaped" figure - please see attachment. 3.
